I had a customer call the other night wanting Q and Ribs for Easter when his family comes into town. Got off at 7 this morning and stoped at Sams for the meat and had everything on by 8:30.



And for those of you who arnt familure with my cooking area, this is "The Smoke Shack" with an addition for the smokers. Everyone is nice and happy being covered up. The front panels are removable for summer cooking. Wink

You need a guru on that WSM. That way you can go to sleep without worrying about that meat.

Nope, I like the sand. I think it controls the heat better. IMHO. Shoot, I could buy another WSM for the price of a Guru. Besides, I like the exersise of getting up and checking the temps. Brings back the days of stick burner. Wink
