Sorry to hop in late, but Carl nicely summed up (and further clarified with his table shuffle post of CBJ's) what things were like from my vantage point.
A.) 1st time CBJ should have the benefit of a "mentor CBJ" as I appreciated Carl's leadership at the table.
B.) I might vote for CBJ's to have to see / do some box prep as part of the class. As I volunteered at the New Holland class back on March 14th and came away with a new appreciation of the work that goes on in the back room.
C.) I'm not sure which scores varied the widest (appearance, taste, tenderness) but for chicken some folks may not like the the "look" of a piece of chicken that has been glazed over. The best chicken we had at our class was a sliced breast that was nicely plated and had excellent taste / tenderness).
There are so many factors ... but getting a full table of CBJ's might help. _________________ Andy
