I love ribs. My favorite are the spare ribs. I want to try to cook these at my next competition instead of BB. How does one prepare the St. Louis style of ribs? What the the benefit in cooking it this way as opposed to cooking the whole slab? I would love to see a tutorial if anyone knows of one.
