has anyone used a rack to cook their peppers? I have and stuff them vs. wrap them in bacon, seems like I can fit alot of " stuffing "in there. What do you do? _________________ death isnt a punishement , it is a release. |

I do use a rack but it only holds 12. When I'm cooking more, I use a disposable muffin pan turned upside down and cut a small hole in the bottom of each one and use it. Works pretty good. _________________ Ron

I've been cutting about a quarter of one side out, leaving the top and base, seeding them, and filling them that way. You can cook them on their sides on any wire rack, and not worry about special holders. The piece cut out can be minced into the cream cheese mix or just used for something else. _________________ Dave

I've been cutting them in half, seeding them, stuffing them with a mixture of chicken, cream cheese, pepperjack cheese, bbq rub, wrapping them in bacon, smoking for about 2-3 hours (until the bacon is cooked through) then serving with a ranch dipping sauce. Yum! _________________ Keith

I cut the top off, seed and devein them and stuff with a mixture of crab dip,cream cheese,4 blend shredded mexican cheese and finely diced Canadian bacon. I top with a strip of bacon. _________________ Ron

Here is a neat little variation to the classic ABT
I tried Pie dough, and Filo Cups
Mixed Cream cheese and Crisped bacon, Jalapeno, And some other cheeses and rub
Filled and Smoked,
Personally I liked the Filo cups best, both tasted great. _________________ The only thing consistant in BBQ is, It's always the judges fault!
