Well lets see, Where to start.......

First i arrived a little bit early, That's Good. Untill I learned that I had left the grates to a WSM at my house. I drove to Melvins place, Because it was close, And purchased 2( That's right 2) Big Green egg grates in an atempt to make them work in a WSM. Well lets just say that they do not work. And at 44.95 a piece I made sure that I took them immediatly back to his shop for a refund!

so off I go, Had to drive back home, About an hour. Than the return trip was hecktick because we are getting into rush hour now. But I arrived witht the grates that I needed. Now I feel like I am behind scheduale because of the plan I had laid out in my head as to what and when. I get my Hog prep going on. And find out I am in good shape. And actually way ahead of where I need to be.

Fast forward to 1:30am, I decide I better get some sleep. hog is on and going good. gonna be a busy morning with all 7 catagories to turn in. I no sooner fall asleep. and I awake with a burst of energy. I am ready to go. And what the heck time is it??? I need to tend to my hog!!!!!

It was 2:08am.......now I am awake with nothing to do. So got my sausage prep done. Figuring I will get me some good sleep just a little later than I expected. well I finally got me a good 1 1/2 hrs at about 5am

My Chefs choice was a bacon cup dipped in chocolate, Filled with creme brulee, And topped with a raspberry mouse. Well lets just say I wont be turning those in anytime soon!!! I liked the taste of em. But the judges couldn't figure out what the heck I was up to I guess!!

My sausage didn't come out as planned either, well it was a try but i think I have other plans next time. But was funny it was the first turn in, It was hastily returned to us, They thought it was our chicken. And it did look like chicken Laughing Laughing Laughing

And my Hog, Well he needed 7 more points, man 7 points is going to be tuff to bring up. But we'll keep at it.

Is that sausage wrapped in chicken?
Sounds like you ended up ok, congrats on the hog finish.
I had a brain fart on Saturday too. I left 2 buspans on the lower rack in my cooker and fired it up without taking them out. After about a half hour we were trying to figure out what the smell was.
Pulled the rack, let it cool down and the melted plastic came off cleanly with no residue. Didn't find the second one till cleanup on Sunday. It fell under the bottom shelf and worked it's way back up to the front on the drive home. Might be the secret ingredient considering how we finished...

Dan - that kinda sound like our trip to WV last year. As we got closer Christy & I started going over things and realized we only had one thermometer (and 2 WSMs and a Kettle) and no cutting boards. Luckily there is a pretty big grocery store on the way.

Congrats on you walk - your chefs choice sounds good to me. How were they? Would you change anything next time?

I would say 1 tub plus a pinch of tub= 1st place chicken. Will try to duplicate it at Dover Laughing

I dunno about that 6 point issue. The hog bits that I tried were just outstanding.

And yes Tom, I would change a little. I thought they tasted great. But I am definatly biased. Laughing Probly had too much going on. should have made them a little more simpliar. But I alredy have the next one rolling around in my head. Cool
