OK, this is embarassing. My butt needs work. Freinds, family and co-workers all seem to like my butt. But the judges dissagree.
In Salisbury:
I injected with some sweet & salty goodness. My rub is on the sweet side. I only trim the ugly stuff. I cooked at about 230* to about 190*. I think it could have gone longer but I wanted to rest it a couple hours. I don't foil. I pulled a little early - it gad cooled a bit by turn in.
The plan:
Add some heat to my rub, Start earlier to get more "done". Pull just before turn it. Work on a better sauce.
Any other suggestions - I'm open to trying anything.

Hey Christy! We are on the fence about Landover. 18 teams have signed up. After that we are doing Stevensville. How bout you guys? Oh yeah Val says hi and she is still waiting for the famous perdue recipe!

Yeah we to are on the fence about Landover. We will also be doing Stevensville so that will be cool  . Tell Val the Perdue recipe is under Recipe's on this forum Or would she prefer an autographed one
