Hi Folks,
I done got myself volunteered for a community service project called Join Hands Day, this Saturday May 3rd.
I need to know how much beans to cook for an approximate 100 people.
This is not a BBQ , but, I worked some smoked food into the menu.
We are having (deli) SMoked Turkey and Cheddar and Maple Ham and American cheese sandwiches, along with smoked, sliced BBQ'd sausages over sauteed onions and peppers, and a scoop of beans (also cooked in the smoker) as sidedishes.
Would 1 whole catering tray of Sausage Peppers/Onions, and one whole tray of beans, be enough to go along with the sandwiches?

Joe,
Usally I go with a #10 can for 22-25 people so 4 cans should do it. I would split them up into 3 pans. Always best to have more than less. Many people will not take a true serving of the beans.
Also on the sausage, As a side you may wnt to cut them up into medalions of about 1/2" thick. You can figure about 4oz. per person. Plus the onions and peppers. So I am thinking you need about 30lbs of sausage. And 20lbs of onions and 15lbs of sausage. I also like to add chicken stock to the product to keep it moist,But water will also do.
Again I think you are into the 3 to 4 tray area.
On a side note I would smoke the sausage first and then Cut up, Then saute the onions and peppers. Then combine and reheat on the smoker or Oven.

The amount of beans you need pends on the amount of gas you want to produce. They are cheap and a great filler. You can not have too many beans. _________________ Big George's BBQ
