I know almost everbody here has probly had ABT's
Well here is my little tweak to it
2lbs Collosal Shrimp (8 and unders)
1lb Horseraddish cheddar
1lb Pepper Jack
1 package of Cream cheese
Shred and Mix cheese, stuff shrimp, Wrap with thick sliced Bacon
Sprinkle with 3eyz rub
Smoke at 275 till bacon gets crispy, but don't over cook shrimp
This is where it pays to be the chef, Cause of all that taste testin that has to be done!
Follow up imediatley with the adult beverage of your choice!  _________________ The only thing consistant in BBQ is, It's always the judges fault!

Sounds great. How do you get the bacon crispy without overcooked shrimp? Sounds tricky.

Not really that tricky, That is why I use the Collosals, They take a little longer to cook,And I keep the shrimp towards the firebox or hotter end of my cooker. _________________ The only thing consistant in BBQ is, It's always the judges fault!

That sounds good, I vote we make a batch at the next comp. I came up with a variation on abt's recently. Leave the bacon off the abt, wrap it in a strip of flattened chicken breast, then wrap the bacon around the whole thing. Made some with blue cheese and pulled pork, that was good too. Don't forget the 3eyez rub. _________________ Jon
