So we've had the whole winter to practice and experiment and the season is just around the corner. Anyone else making changes in flavors or cooking methods?

We've completly changed our chicken marinate, rub and method. We've made changes to our ribs and our pork will be better this year - promise!

Presentation is also changing - so secret I'm not posting pics on our web site!

We are not making any drastic changes to our cooking methods or preparation. Some slight changes for sure. One change I want to make is procedural. Being a newbie on the circuit, I don’t have all of my techniques down pat yet. When I try to remember back to what we did during the contest, I like to make notes on Sunday morning. Due to a combination of too many beers and approaching old age, my memory is not what it once was. I would like to keep an accurate journal from prep work to cook times to temps etc for each meat throughout the entire weekend. It might be a little work, but for me, it would be worth it when doing the debriefing. The other thing I have been thinking about is starting a guest book to have on site at the different contests. I think it would be neat for folks that stop by to visit throughout the weekend to have a place to write a few comments and sign their names. I think it would be something that would be an enjoyable read in the years to come. Corny maybe, but I think I would like it! Smile

Yup, Yup, And Yup

Changed alot, Changed back, Changed again. I don't think I am ever totally satisfied. Nothing Major but I always find something I would change when I cook. i don't know if I will ever have the Ultimate BBQ. I am my own worst critic at times. Somehow there is an allure of the Ultimate bbq that I am searching for, If I ever find it..........Well I don't know what I'll do.

We decided to change our Chicken and Rib process, last weekend went well. I think maybe 3-4 more times, and I can post some pictures.

Of course this will change again when the new toy arrives this week. Can't wait for my Tallboy to arrive. Very Happy Very Happy

I have been working very hard on my chicken using a new secret weapon. I won't say what it is, but a hint would be a new rub product I found on the internet. Its made by two guys with 3 eyes, thats all I'll say. Its pretty good too, I hope no one else is using it and please don't spread it around. Laughing

All this chatter about this rub, maybe I should try some.. Oh wait, I've got cases in my garage!!! Yes, we will have it in Salisbury, or we have plenty if interested before that. For those of you along 95 between Wilmington, DE and Bel Air, MD, I may be able to make arrangements to deliver/meet up and save you some on shipping.
